Switching from Apple

Hello, big question for me, my main work tool is a MacBook Pro M1 which I am very satisfied with, I use the Apple cloud for my projects. I say it again, I am totally satisfied with it. It’s been since 2007 that I’m using mac computers. But I am thinking about switching outside of an American ecosystem. This is by far the most complicated change, what are the possible alternatives?
