Questions about Curse of Strahd expansions/mods?

I'm looking to run a CoS campaign for my group, but I am unfamiliar with it entirely. I've read many posts talking about different mods and remakes people have made for the module and I just wanted to get the advice on if they are worth incorporating into my campaign, and how to appropriately use them?
