Why do people rob/bully/murder shopkeepers?

There is countless amounts of stories and discussions on people who do that, and how to deal with them, but i cannot find one answer to why, why do that?

C’mon, its not like you can’t afford a pack of health potions, so why murder? And whats the point of gold if you steal everything anyway?
