Any advice on my terribly ill 8 month goldendoodle?

Arlo, my 8 month goldendoodle has been on a terrible health journey over the past few weeks. He was bein a picky eater for about 3 weeks and our vet suggested to change foods. Following a controlled food change after 5 days he had 12 hours of watery diarrhea which m went on the improve. Then 6 days later he had 4 hours of mud pie diarrhea, this also resolved.

Fast forward 2 weeks, he went for his first groom 10 days ago and after cutting his hair the groomer (operating out of a vet office) noticed his abdomen was distended and hard. The office called requesting he get an X-ray and labs which I agreed to. 30 mins later they said he was going into “bloat” and needed to go to the emergency vet immediately. He underwent a decompression followed by a gastropexy and ex lap but continued to have gas accumulation in his bowel and ultimately needed serial decompressions before he came home with metronidazole and gasx as well as a biome diet and probiotics.

5 days after surgery his breathing was labored and congested in the middle of the night so I took him back to the emergency vet where he was found to have aspiration pneumonia and placed on 2 more antibiotics and an antacid.

Today his lungs are getting better but he’s lost weight and they want us to increase his food with carbs but since doing that his belly is bloating again.

A GI panel sent to Texas A&M with low folate, B12 and low exocrine pancreatic enzymes but they gave us no further direction than to see a specialist which we aren’t able to do for 2 months (booked out locally and at the university hospital that’s top rated for the state).

Does anyone have any recommendations or have experienced anything similar and can help with recommendations on how to get him to eat regularly and drink regularly?
