What's a good level to fight Ebrietas?

I just attempted to defeat her several times, level 66 with a +6 Beast cutter. All attempts I got her to just above half health, but fail shortly after. Do you think I should bide my time and hold off getting her just now, or just keep trying til she's doomed?
