Can Early Harvest be used as an instant while tapping for an X mana cost creature?

Getting back into magic for the first time in a hot minute, could I use Early Harvest as an instant while tapping for an X cost like a Hydra to basically add more mana to the X cost? I doubt it can, figured I'd check
