Wondering about when to plant crops 'The long time to grow ones'

I was wondering when i am supposed to plant crops like Wheat - Barley - Flax and such that seem to have a 240 day growth period. but only a 3 month planting period that is late in the year near fall. How exactly are these plants supposed to survive winter as my impression was ' winter kills most crops'
