I'm planning to rent an RV and tour the American Southwest. What are the laws about camping for a day or two?

This is my current plan. Is it legal to just pull over and camp for a night just wherever? Or should I look for designated RV spots? Or would it just be easier and cheaper to rent motels for a night when I need to?
