Fantasy Novel that's more concerned with Wonder than Worldbuilding?

Looking for something accessible and fantastical to spend some time with but I honestly can't bring myself to care about GoT style fantasy where it's basically just gritty real world politics with dragons. Looking for something, in my mind I pictured a travelogue from a stranger as the style but I'm not wed to it, that's much more about witnessing, experiencing, and exploring the strange and wonderful than webs of intrigue or assassinations. I'm looking for a sort of fantasy where you don't know what's over each hill on the horizon but want to let yourself soak into the world and find out.

I realize this might be a little overly esoteric but any suggestions are appreciated.
