Good crockpot tofu dish for a potluck?
Hi all! I am enrolled in a vegan yoga teacher training program and I (and all of the students) eat vegan when we're in the studio. We have a monthly potluck and I want to bring a yummy main dish next month (since we are mostly omnivores cooking vegan food, there are a lot of side dishes).
I personally enjoy tofu a lot and there were no tofu dishes last month. BUT since we arrive in the morning and eat around 12:30, it would have to stay warm in a crockpot for a few hours, and everything I'm thinking of seems like it would dry out (say, baked tofu in a ginger sauce over rice). Ideas? Maybe something saucier, like tofu in a peanut sauce over rice? I don't really want to bring a soup because other people probably will.
OR maybe I should just bring a cold / room temp dish ...
